广式莲蓉月饼

广式莲蓉迷你月饼





时间过得好快的。中元节过去。
又说迎接中秋佳节的到来。
虽然还有几个星期才是中秋,但中秋气氛一点也不缺哦。
烘焙材料店都是人潮。至于超级市场也开始出售各花样的月饼和小朋友玩的灯笼。
而在部落交流站这里更加热闹了。
相信部落格的朋友们都在开始为家人、朋友、用心制作月饼了。

广式莲蓉月饼

材料:

糖浆 150克
花生油 / 玉米油 60克
枧水 5克
低筋面粉 250克



馅料:纯莲蓉 大约700克(每份 30克搓圆)

涂面:蛋黄 1个 + 鲜奶 少许(一起搅拌均匀后过滤)










[做法]


1)首先准备一个容器。
2)将糖浆倒入。花生油和枧水也一起加入。
3)用木棍把所有液体物搅拌均匀。可见糖浆变成深色的。
4)最后筛入面粉。用木棍搅拌成均匀的月饼面团。不许过度搅拌。
5)把容器盖上。放置休息至少1小时后才使用。可见面团是不粘手的。
6)可以把月饼面团平均分割每份20克,搓圆备用。
7)把月饼皮压扁后包入一份30克的莲蓉馅料。再放入月饼模型里印出形状。

8)预热烤箱170度,把月饼烘烤10分钟或颜色开始转变,表层开始无光泽,
取出待凉了才涂上蛋液。再送入烤箱继续烘烤15分钟或上色。

9)月饼取出后,放在铁架上散热。隔天或3天后回油松软湿润才享用。

Green Tea Red Bean Jelly Mooncake

















Ingredients for centre filling:

250 gm. coconut milk
30 gm. brown sugar
1 tsp. agar agar powder
100 gm. boiled red beans - mashed
few drops of pink colouring

To make mock jelly egg yolks:
Boil them together and pour into small rounded ice cube moulds and let it set.

1/2 tbsp. agar agar powder
350 ml. water
50 gm. sugar
1/8 tsp. salt
1 tsp. instant jelly
2 Tbsp. evaporated milk
few drops of orange colouring

Ingredients for Pastry Ingredients:

500 gm. Thin coconut milk
90 gm. sugar
8 gm. agar agar powder
few pieces of pandan leaves
100 ml. thick coconut milk or evaporated milk
2 tsp. Green tea powder
100 gm. Fresh cream

Method:

(1) For fillings, boil all the ingredients together and pour into small cup moulds to set. Put a piece of egg yolk agar agar into the center of the jelly. Let it to set. When set, remove from mould and set aside.
(2) For the pastry ingredients, boil thin coconut milk with sugar, pandan leaves and agar agar powder till sugar dissolves.
(3) Add in thick coconut milk , green tea powder and fresh cream.
(4) Pour some green tea jelly mixture into mooncake moulds and let it semi-set. Place the filling on top of the half set green tea agar agar.
(5) Pour the balance green tea agar agar on top of the filling till full.
(6) Let it set and chill in the fridge before serving.

    Ingredients

    • filling
      40g sago, soaked until plumped up
      300ml water
      100g caster sugar
      2 tbsp agar-agar powder
      10g cornflour
      1/4 tsp salt
      70g evaporated milk

      skin
      500ml water
      3 pandan leaves, shredded and knotted
      120g caster sugar
      2½ tbsp agar-agar powder
      1/4 tsp salt
      100ml thick coconut milk
      2 tbsp whipping cream
      1-2 drops violet colouring
      2 tbsp soaked chia seeds

    Method

    To prepare filling: Bring water to boil and add soaked sago. Keep boiling until sago turns transparent. Strain and rinse sago under running tap water to remove the starch. Drain well.
    Combine water, sugar, agar-agar powder, cornflour, and salt, in a pot. Stir and cook over medium low heat till it comes to a boil. Add in sago and evaporated milk, and continue to cook for 20 to 30 seconds.
    Pour mixture into plastic moulds and leave to set. Place in the refrigerator to chill and set firmly. Remove filling from the mould.
    To prepare skin: Place water, pandan leaves, sugar, agar-agar powder and salt in a clean pot. Cook over medium low heat until it comes to a boil.
    Add coconut milk, whipping cream, and colouring. Stir well, and continue to cook for 1 minute or until mixture is fairly thick. Discard the pandan leaves and remove pot from heat. Mix in the soaked chia seeds.
    Spoon a tablespoon of agar-agar mixture into a wet plastic jelly mooncake mould. Set aside for 1 to 2 minutes.
    Place a filling in the centre of the mould and add more agar-agar mixture to fill up the mould. Set aside to cool and then place in the refrigerator to chill and set completely.

    燕菜蛋黄:

    [器材]
    • 球状制冰模 1个,可做20粒

    材料A:
    • 白糖80克
    • 燕菜粉2tsp
    • 盐1/8tsp
    • 红萝卜100gm(切块蒸熟,趁热压成泥狀)


    草莓乳酸 & 芝士燕菜月饼 


    馅料 :(B)
    •燕菜粉 - 2 tsp
    •jelly粉 - 1 tsp
    •幼糖 - 50g
    •清水 - 250ml
    •芝士- 40g ( cream cheese )
    •柠檬汁 - 2 tsp
    •鲜奶油 - 100 g ( whipping cream )

    皮料 : (C)
    •燕菜粉 - 1 tbsp
    •jelly 粉 - 1 tsp
    •幼糖 - 100g
    •草莓乳酸饮品 - 500 ml ( Strawberry yoghurt drink )
    •草莓filling - 100g ( 稍为用叉压烂 )

    做法 :
    1) 材料 (A) 倒入锅里煮滚,熄火过滤后,倒入蛋黄模里,待凝固扣出,备用。
    2) 馅料 (B) 除了鲜奶油,全部倒入锅里煮滚,熄火加入鲜奶油,拌匀过滤。
    3) 将少许 (2) 倒入小杯子里,稍凝固后,置入一粒 (1) 的蛋黄,再倒入(2)至盖满
    蛋黄,待凝固冷却后,取出待用。
    4) 皮料(C ) 倒入锅里煮滚,搅至草莓酱熔化,熄火。
    5) 将少许(4)的草莓皮料倒入模里,稍凝固后置入(3),再倒入(4)填满模。
    6) 待 (5)凝固,放入冰箱冷藏。


    芒果乳格月饼

    馅料 :(B)

    •清水240ml
    •乳格 1杯
    •幼糖 60g
    •燕菜粉1 1/4 tsp

    皮料 : (C)

    •乳格饮料700ml
    •清水200ml
    •燕菜粉1tbsp
    •幼糖 60g

    做法 :
    1) 材料 (A) 倒入锅里煮滚,熄火过滤后,倒入蛋黄模里,待凝固扣出,备用。
    2) 馅料 (B) 除了鲜奶油,全部倒入锅里煮滚,熄火加入鲜奶油,拌匀过滤。
    3) 将少许 (2) 倒入小杯子里,稍凝固后,置入一粒 (1) 的蛋黄,再倒入(2)至盖满
    蛋黄,待凝固冷却后,取出待用。
    4) 皮料(C ) 倒入锅里煮滚,搅至草莓酱熔化,熄火。
    5) 将少许(4)的草莓皮料倒入模里,稍凝固后置入(3),再倒入(4)填满模。
    6) 待 (5)凝固,放入冰箱冷藏。


    巧克力芝士燕菜月饼(芝士馅)

    馅料 :(B)

    • 清水130g
    • 鲜奶150g 
    • Cream cheese 50g 
    • 细糖 35g
    • 燕菜粉 1tsp

    皮料 : (C)
    (I):
    • 燕菜粉 2tsp
    • 清水 400ml
    • 黄砂糖 60g

    (II):
    • 淡奶100ml
    • 可可粉 2大匙
    • 玉米粉1tsp *我用蛋黄粉取代*



    外皮做法:
    1)材料(I) 事先拌匀,过滤备用。
    2)材料(II) 拌匀后,小火煮至滚。
    3)加入材料(I),再稍煮片刻。
    4)倒些许皮料在燕菜月饼模具,待表面稍凝固时,放入馅料燕菜。
    5)再继续倒入皮料燕菜填满模具。
    6)放入冰箱冷藏至凝固即可。

    温馨启示 : 以上材料,可以制作 四粒燕菜月饼
